Centhini : From Manuscript to Table

Centhini : From Manuscript to Table

Immersive Javanese dining experience that revives the culinary wisdom recorded in the Serat Centhini, a monumental 19th-century Javanese manuscript often called “The Encyclopedia of Javanese Life.”

The Serat Centhini was composed in the early 1800s during the reign of Pakubuwono V in Surakarta. Spanning 12 volumes and over 700 cantos, it covers Javanese cosmology, spirituality, art, customs, and food. It records hundreds of recipes, cooking rituals, and ingredients — making it a living archive of Indonesian gastronomic heritage

This dinner invites guests to travel through time — from ancient script to sensory reality — experiencing the flavors, rituals, and philosophy of Java’s noble and rural kitchens.
Each course is drawn directly from descriptions in the
Centhini, interpreted with contemporary presentation while honoring traditional ingredients, cooking methods, and symbolic meaning.
